  • 1 lb ground beef (80/20 blend)
  • 1 large yellow onion, thinly sliced
  • 2 cups beef broth (low sodium)
  • 2 tablespoons all-purpose flour (divided)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons butter (unsalted)
  • 1 large egg
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, egg, 1 tablespoon flour, 1 teaspoon thyme, 1 teaspoon parsley, and 1/2 teaspoon black pepper. Mix gently and form into four equal patties, about half an inch thick.
  3. Lightly coat each patty with the remaining 1 tablespoon of flour, shaking off excess.
  4. Heat a 12-inch cast iron skillet over medium-high heat. Add 1 tablespoon butter. Once melted and foaming, sear patties for 3-4 minutes per side until browned. Remove patties and set aside.
  5. Reduce heat to medium. Add sliced onions to the same pan. Cook for 5-7 minutes until softened and golden brown.
  6. Sprinkle remaining flour over onions and stir for 1 minute. Slowly pour in beef broth while stirring constantly. Add Worcestershire sauce and stir until mixture thickens slightly.
  7. Return patties to the pan, nestling them into the gravy. Spoon some gravy over the top of each patty.
  8. Transfer skillet to the preheated oven and bake for 20-25 minutes, or until internal temperature reaches 160°F (71°C).
  9. Remove from oven and let rest for 5 minutes before serving.

Notes

Do not overmix the meat to avoid tough patties. Ensure the pan is hot before searing to get a good crust. Let the dish rest for 5 minutes after baking to retain juices. For gluten-free, swap flour for a gluten-free blend or cornstarch. For dairy-free, use olive oil instead of butter.
