A quick and healthy weeknight dinner featuring tender cod fillets coated in a sticky, sweet, and savory honey-soy glaze with garlic and ginger.
Ingredients
- Cod fillets (fresh or thawed frozen)
- Honey
- Soy sauce (or Tamari for gluten-free)
- Fresh garlic cloves, minced
- Fresh ginger, grated
- Rice vinegar
- Toasted sesame oil
- Green onions, sliced
- Red pepper flakes (optional)
- Salt and black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil or parchment paper and lightly grease it.
- Pat cod fillets dry with paper towels and season lightly with salt and black pepper. Place on the prepared baking sheet in a single layer.
- In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil until smooth.
- Spoon half of the glaze over the cod fillets, brushing or spooning it evenly over the top. Reserve the remaining glaze.
- Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- Remove from oven, brush the remaining glaze over the hot fillets, and return to the oven for 1-2 minutes to caramelize.
- Garnish with sliced green onions and red pepper flakes. Serve immediately.
Notes
Ensure cod is patted dry before seasoning to help the glaze adhere. Do not overcook the fish, as it can become dry. Internal temperature should reach 145°F (63°C). For a spicy kick, add red pepper flakes or jalapeño to the glaze.
