A quick and easy weeknight dinner featuring flaky cod filets coated in a sticky, sweet, and savory honey-soy glaze. Ready in under 30 minutes with minimal cleanup.

- 2 Atlantic cod filets (fresh or thawed frozen)
- 1/3 cup raw honey
- 2 tablespoons low-sodium soy sauce (or Tamari for gluten-free)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- Pinch of red pepper flakes (optional)
- Salt and black pepper to taste
- 1 lemon, juiced
- 2 green onions, sliced (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat cod filets dry with paper towels and season lightly with salt and pepper.
- In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil until smooth.
- Place cod filets on the prepared baking sheet. Brush about half of the glaze over the top of each filet, covering the edges.
- Bake for 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
- Remove from oven and brush the remaining glaze over the fish.
- Turn oven to broil and broil for 1-2 minutes, watching closely, until the glaze bubbles and turns golden brown.
- Remove from oven, squeeze fresh lemon juice over the top, and garnish with green onions and red pepper flakes. Serve immediately.
Notes
Do not overcook the cod as it is lean and dries out quickly. Ensure the fish is patted very dry before baking to help the glaze stick. If using frozen cod, thaw completely in the refrigerator and dry thoroughly. For a thicker glaze, simmer the remaining sauce in a small pan for 2 minutes before pouring over the fish.
