Description

A quick and easy weeknight dinner featuring wild-caught salmon fillets baked with a sweet and savory pineapple glaze made from soy sauce, honey, lime, and ginger.


Ingredients

  • 1.5 to 2 pounds fresh salmon fillets
  • 1 cup pineapple chunks (fresh or canned in juice)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • Pinch of red pepper flakes (optional)
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Olive oil (for brushing pan)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.
  2. Pat salmon fillets dry with paper towels to ensure proper baking and glaze adhesion.
  3. In a small bowl, whisk together soy sauce, honey, lime juice, sesame oil, minced garlic, grated ginger, and red pepper flakes until smooth.
  4. Toss pineapple chunks in 1 tablespoon of the glaze mixture.
  5. Place salmon fillets on the prepared baking sheet. Brush the top of each fillet generously with the remaining glaze.
  6. Arrange the glazed pineapple chunks in a single layer around the salmon.
  7. Bake for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork.
  8. Optional: Broil for the last 1-2 minutes to caramelize the glaze, watching closely to prevent burning.
  9. Remove from oven and let rest for 2 minutes.
  10. Garnish with chopped green onions and sesame seeds. Serve immediately.

Notes

Pat the salmon dry before baking to prevent steaming. If using canned pineapple, ensure it is packed in juice, not syrup, and drain thoroughly. Salmon continues to cook slightly after removal from the oven; pull it out when just barely opaque in the center. Internal temperature should reach 145°F (63°C) for food safety.
