- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
- Mash the ripe bananas in a medium bowl until smooth, reserving 1/4 cup for topping if desired.
- In a large bowl, beat the softened butter and sugar together until light and fluffy (3-4 minutes).
- Beat in the eggs one at a time, then add the vanilla extract and mix until combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
- Gently fold in the mashed bananas and nuts (if using) with a spatula.
- Pour batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use bananas with black spots for maximum sweetness and moisture. Do not overmix the batter to avoid a dense cake. If the top browns too quickly, tent with foil after 40 minutes. For vegan version, substitute butter with coconut oil and eggs with flax eggs.
