A tender, savory, and slightly sweet slow cooker Mongolian beef that mimics restaurant quality without the hassle. This easy weeknight dinner uses simple pantry staples and requires minimal prep time.
Ingredients
- 2 pounds flank steak or sirloin, sliced against the grain into thin strips
- 1 cup low-sodium soy sauce
- 1/2 cup brown sugar
- 2 tablespoons fresh ginger, minced
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 4 stalks green onions, chopped (divided)
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water
- 1 teaspoon sesame oil
Instructions
- Place flank steak in the freezer for 20-30 minutes to firm up, then slice against the grain into thin strips.
- In a large bowl or directly in the slow cooker pot, whisk together soy sauce, brown sugar, minced ginger, minced garlic, and red pepper flakes until sugar is dissolved.
- Toss the sliced beef into the sauce mixture to coat evenly.
- Cover and cook on LOW for 4-6 hours.
- About 30 minutes before serving, stir the cornstarch and cold water slurry until smooth and pour into the slow cooker.
- Stir gently to distribute, cover, and cook on HIGH for the final 30 minutes to thicken the sauce.
- Stir in sesame oil and half of the chopped green onions.
- Taste and adjust seasoning if needed, then serve immediately over steamed rice.
- Garnish with remaining green onions and toasted sesame seeds.
Notes
Slice beef against the grain for maximum tenderness. Do not add cornstarch at the beginning of cooking as it may break or thicken too quickly. If using a smaller slow cooker, cook in batches to avoid overcrowding. For a spicy version, add extra red pepper flakes or sriracha. For a low-carb option, substitute brown sugar with a keto-friendly sweetener and serve over cauliflower rice.
