An elegant and easy-to-make roasted salmon dish featuring a sweet and smoky bourbon peach glaze, perfect for date nights or busy weeknights.

- 1.5 to 2 pounds salmon fillets
- 2–3 fresh or frozen peaches, pitted and chopped
- 1/4 cup bourbon
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon unsalted butter
- Salt and freshly cracked black pepper
- Fresh parsley or chives for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
- Pat salmon fillets dry with paper towels and season lightly with salt and pepper on both sides.
- In a small saucepan over medium heat, combine bourbon, brown sugar, soy sauce, garlic, ginger, and butter. Whisk until butter melts and sugar dissolves.
- Simmer the glaze for 5-7 minutes until it reduces slightly and thickens into a syrupy consistency. Remove from heat.
- Place salmon fillets on the prepared baking sheet. Spoon half of the glaze over the top of each fillet.
- Scatter the chopped peach chunks over the salmon. Pour the remaining glaze over the peaches and fish.
- Roast for 12-15 minutes, or until salmon is opaque and flakes easily with a fork. For a charred finish, broil on high for the last 2-3 minutes, watching closely.
- Remove from oven and let rest for 2-3 minutes before serving. Garnish with fresh herbs if desired.
Notes
Ensure salmon is patted dry before seasoning to prevent steaming. Do not overcook the salmon as it continues to cook after removal from the oven. The internal temperature should reach 145°F for food safety, though 125°F is preferred for medium-rare. Leftovers can be stored in the refrigerator for up to 3 days.
