  • Water (as needed for dough)

Instructions

  1. In a mixing bowl, combine flour and salt. Add the egg and about 1/4 cup of water. Mix with a fork until it starts to come together, then knead gently by hand until you have a soft, pliable dough. Shape into a ball and let rest for 10 minutes.
  2. Lightly flour your surface and rolling pin. Roll out the dough to about 1/4 inch thickness. Cut the dough into approximately 4-inch squares (yields about 8-10 squares).
  3. Place a few slices of pepperoni in the center of one dough square. Add a small spoonful of thick pizza sauce, then top with shredded mozzarella cheese. Leave a half-inch border around the edges.
  4. Fold the dough over the filling to create a triangle or rectangle. Press edges firmly and crimp with a fork to seal tightly.
  5. Whisk the remaining egg with a teaspoon of water. Brush the tops of the hot pockets with the egg wash.
  6. Place hot pockets on a parchment-lined baking sheet. Bake at 400°F (200°C) for 15 minutes, or until golden brown and crispy. Let cool for a minute before serving.

Notes
