Description

A quick and easy 3-ingredient breakfast featuring warm, gooey roll-ups made with tortillas, eggs, sausage, and cheddar cheese. Perfect for busy mornings and meal prep.

  • 1/2 pound breakfast sausage (pork, turkey, or chicken)
  • 4 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon butter
  • Salt and black pepper to taste
  • Optional: diced bell peppers, onions, jalapeños, or salsa

Instructions

  1. Heat a skillet over medium heat and cook the breakfast sausage until browned and crumbled, about 5-7 minutes. Drain excess grease and set aside.
  2. In a mixing bowl, whisk the eggs with a pinch of salt and pepper until uniform and slightly frothy.
  3. Wipe out the skillet if needed, add butter, and let it melt. Pour in the egg mixture and cook gently, pushing edges to the center, until just set but still soft. Do not overcook.
  4. Lay the tortillas flat on a clean surface. Divide the cooked eggs evenly between them, spreading in a line down the center.
  5. Sprinkle the cooked sausage over the eggs, then add the shredded cheddar cheese.
  6. Roll the tortillas tightly from one end, tucking in the sides if needed to create a snug roll.
  7. Place the roll-ups seam side down in the skillet. Cook for 2-3 minutes on each side until the tortilla is golden brown and crispy and the cheese is melted.
  8. Remove from heat, let rest for a minute, then slice diagonally and serve immediately.

Notes

Use fresh, pliable tortillas to prevent tearing. Do not overfill the tortillas to ensure they roll tightly. Sharp cheddar melts better than mild cheddar. For meal prep, these freeze well for up to 1 month. Reheat in a skillet to maintain crispiness or in the oven at 350°F for 15 minutes if frozen.
