Chicken Avocado Melt Sandwich

Description

A quick and easy 3-ingredient inspired sandwich featuring crispy toasted sourdough bread, melted cheddar and Swiss cheese, tender chicken, and creamy avocado.


Ingredients

  • 1/2 pound boneless, skinless chicken thighs or breasts, cooked and shredded or sliced
  • 12 ripe avocados, mashed
  • 1/2 cup shredded sharp cheddar cheese
  • 2 slices Swiss cheese
  • 2 thick slices sourdough bread
  • 1 tablespoon softened butter
  • 1/2 teaspoon garlic powder
  • Salt and freshly cracked black pepper, to taste
  • Lime juice (optional, for avocado)

Instructions

  1. Season chicken with salt, pepper, and garlic powder. Cook in a separate pan over medium heat for 6-8 minutes per side until fully cooked. Let rest, then shred or slice.
  2. Cut avocados in half, remove pits, and scoop flesh into a bowl. Mash with a fork until creamy but textured. Add a squeeze of lime juice if desired.
  3. Spread mashed avocado evenly on one side of each bread slice. Layer chicken, cheddar cheese, and Swiss cheese on one slice. Top with the second slice, avocado-side down.
  4. Spread softened butter evenly on the outside of both bread slices.
  5. Heat a non-stick skillet over medium-low heat. Place sandwich in the pan and cook for 3-4 minutes until the bottom is golden brown, pressing gently with a spatula.
  6. Carefully flip the sandwich. Cook the other side for another 3-4 minutes. If cheese isn’t melted, cover the pan with a lid for the last minute.
  7. Remove from pan and let rest for 1 minute. Slice diagonally and serve immediately.

Notes

Use medium-low heat to prevent burning the bread before the cheese melts. Dry chicken thoroughly to avoid soggy bread. Layer cheese directly against the bread to create a barrier against the avocado. For a dairy-free version, use vegan cheese slices. For a gluten-free version, use sturdy gluten-free bread.
