  • 1.5 lbs boneless, skinless chicken breast (or pre-shredded rotisserie chicken)
  • 1 cup diced ham
  • 1.5 cups shredded Swiss cheese (divided)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. If using raw chicken, season with salt, pepper, and thyme. Cook in a skillet over medium heat for 6-7 minutes per side until done. Let rest for 5 minutes, then shred or cube. If using rotisserie chicken, shred it.
  3. Dice the ham into small, bite-sized cubes.
  4. In a large mixing bowl, whisk together the cream of mushroom soup, heavy cream, Dijon mustard, garlic powder, salt, and pepper until smooth.
  5. Add the shredded chicken, diced ham, and 1 cup of shredded Swiss cheese to the sauce. Stir gently to coat evenly.
  6. Pour the mixture into a 9×13 inch baking dish and spread evenly.
  7. Sprinkle the remaining 1/2 cup of Swiss cheese over the top. If using breadcrumbs, mix with melted butter and sprinkle over the cheese.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
  9. Let rest for 5 minutes before serving to allow the sauce to thicken.

Notes

For best results, shred your own cheese to ensure smooth melting. If using raw chicken, ensure the internal temperature reaches 165°F. Let the casserole rest for 5 minutes before serving to help the sauce set. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
