- 2 slices Sourdough or White Sandwich Bread
- 2 tablespoons Unsalted Butter, softened
- 1/2 cup Sharp Cheddar Cheese, freshly grated
- 1/4 cup Monterey Jack or Gruyère Cheese, freshly grated
- Optional: Mayonnaise for spreading on bread exterior
Instructions
- Grate the cheddar and Monterey Jack or Gruyère cheeses and mix them in a bowl.
- Spread a generous layer of softened unsalted butter on one side of each slice of bread, ensuring coverage to the edges.
- Heat a heavy-bottomed skillet (preferably cast iron) over medium-low heat for about 2 minutes.
- Place one slice of bread, buttered-side down, into the skillet. Layer the cheese mixture evenly over the bread.
- Top with the second slice of bread, buttered-side up, and press down gently.
- Cook undisturbed for 3-4 minutes until the bottom is deep golden brown.
- Carefully flip the sandwich and cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted. Optionally cover with a lid for the last minute to help melt the cheese.
- Remove from pan and let rest for 1 minute before slicing diagonally and serving immediately.
Notes
Use medium-low heat to prevent burning the bread before the cheese melts. Let the sandwich rest for one minute after cooking to allow the cheese to thicken slightly for easier slicing. For best results, grate your own cheese blocks rather than using pre-shredded cheese, which contains anti-caking agents.
