Description
Soft, chewy, and sturdy homemade hoagie rolls made with a scalded milk method for a tender crumb that holds up to heavy sandwich fillings.
Ingredients
Scale
- 500g (4 cups) All-Purpose Flour or Bread Flour
- 240ml (1 cup) Whole Milk
- 120ml (1/2 cup) Water
- 7g (1 packet) Active Dry Yeast
- 20g (2 tablespoons) Sugar
- 10g (2 teaspoons) Salt
- 30ml (2 tablespoons) Vegetable Oil or Melted Butter
- 1 egg beaten with 1 tbsp water (for egg wash)
- Sesame Seeds or Poppy Seeds (optional)
Instructions
- Scald the milk and water in a saucepan until just simmering (180°F), then cool to lukewarm (105-110°F).
- In a stand mixer bowl, combine the lukewarm milk mixture, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- Add oil (or melted butter) and salt to the yeast mixture. Add half the flour and mix on low. Gradually add remaining flour until the dough pulls away from the sides.
- Knead on medium-low for 8-10 minutes (or hand knead for 10-15 minutes) until the dough passes the windowpane test.
- Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1-1.5 hours until doubled in size.
- Punch down dough and divide into 8 equal pieces. Roll each into a long oval shape and place on parchment-lined baking sheets.
- Cover rolls loosely with oiled plastic wrap and let rise again for 30-45 minutes until puffy. Preheat oven to 375°F (190°C) during the last 15 minutes.
- Brush tops with egg wash and sprinkle with seeds if desired. Bake for 15-18 minutes until golden brown and internal temperature reaches 190°F.
- Transfer to a wire rack and brush immediately with melted butter for a softer crust. Cool completely before slicing.
Notes
Use a digital scale for flour accuracy. If hand-kneading, expect 10-15 minutes of work. Ensure yeast is fresh. Do not over-flour during shaping; wet hands instead. Rotate baking sheets halfway through baking for even color.
