Ingredients
- 4 salmon fillets (6 ounces each)
- 1 cup (2 sticks) unsalted butter
- 2 tablespoons extra virgin olive oil
- 6–8 cloves garlic, minced
- 1 large lemon (juice and zest)
- 1/4 cup fresh flat-leaf parsley, chopped
- 1/2 teaspoon red pepper flakes
- Kosher salt and freshly cracked black pepper to taste
- Optional: Splash of dry white wine
Instructions
- Pat salmon fillets dry with paper towels and season generously with salt and black pepper.
- Place a large skillet over medium-high heat and add olive oil and half of the butter. Wait until the butter foams and subsides.
- Place salmon fillets in the skillet, skin-side down if skin-on. Do not move for 3-4 minutes to form a golden-brown crust.
- Flip salmon gently and cook for another 3-4 minutes until it flakes easily and reaches an internal temperature of 145°F. Remove salmon and cover loosely with foil.
- Reduce heat to medium-low. Add remaining butter to the same skillet. Once melted, add minced garlic and red pepper flakes. Stir constantly for 1-2 minutes until fragrant but not brown.
- Remove pan from heat. Stir in lemon juice, lemon zest, and chopped parsley.
- Spoon the garlic butter sauce generously over the salmon fillets and serve immediately.
