An elegant yet approachable French-inspired dessert featuring a light, airy chocolate mousse layered with fresh raspberries. This recipe is surprisingly simple to make at home, requiring only a few high-quality ingredients and basic techniques.
Ingredients
- 200 grams (7 oz) high-quality dark chocolate, chopped
- 150 grams (about 1 cup) fresh raspberries, divided
- 300 ml (1 1/4 cups) cold heavy whipping cream
- 3 large eggs, separated
- 50 grams (1/4 cup) granulated sugar, divided
- 5 grams (1 packet) unflavored powdered gelatin
- 3 tablespoons cold water (for blooming gelatin)
- 1 teaspoon pure vanilla extract
- 1 teaspoon fresh lemon juice
Instructions
- Sprinkle powdered gelatin over 3 tablespoons of cold water in a small bowl and let sit for 5 minutes to bloom.
- Chop dark chocolate into small pieces and place in a heatproof bowl over a pot of simmering water (double boiler method). Stir gently until completely melted and smooth, about 2-3 minutes.
- Remove chocolate from heat and stir in vanilla extract and lemon juice. Set aside to cool slightly until warm to the touch.
- In a medium bowl, whisk egg yolks with half of the sugar until pale and creamy, about 2-3 minutes.
- Slowly drizzle one-third of the melted chocolate into the egg yolks while whisking constantly to temper them. Pour the yolk mixture back into the remaining chocolate and whisk until combined.
- In a clean, dry bowl, whip cold heavy cream with the remaining sugar until stiff peaks form.
- In another clean bowl, whip egg whites until soft peaks form, then gradually add sugar if needed and whip until stiff, glossy peaks form.
- Squeeze excess water from bloomed gelatin and add it to the warm chocolate mixture. Stir until dissolved and let cool for 10 minutes.
- Gently fold the whipped cream into the chocolate mixture in two additions using a rubber spatula.
- Fold in the whipped egg whites gently to maintain airiness.
- Line the bottom of a springform pan with parchment paper. Spread half of the mousse into the pan.
- Add a layer of fresh raspberries on top of the mousse, then cover with the remaining mousse.
- Smooth the top and tap the pan gently to release air bubbles.
- Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.

Ensure all equipment is clean and dry, especially for whipping cream and egg whites, as any oil or water can prevent proper whipping. Keep bowls cold for best results. If using frozen raspberries, thaw and drain them thoroughly to prevent a soggy mousse. This recipe is naturally gluten-free, but ensure your chocolate and gelatin are certified gluten-free if necessary. For a dairy-free version, substitute heavy cream with chilled coconut cream.
