Description
A light, airy, and velvety smooth tropical mocktail that combines fresh pineapple, full-fat coconut milk, and lime juice for a refreshing, dairy-free, and gluten-free beverage.
Ingredients
Scale
- 2 cups fresh pineapple chunks (or canned in juice, rinsed)
- 1 can (13.5 oz) full-fat coconut milk, shaken well
- Juice of 1 fresh lime
- 1–2 tablespoons honey or agave nectar (optional, to taste)
- 1 cup ice cubes
- 1/2 cup coconut water (optional, for thinning)
Instructions
- Prep the pineapple by peeling, coring, and cutting into chunks that fit into your blender.
- Add pineapple chunks, coconut milk, lime juice, sweetener, and coconut water (if using) to the blender.
- Add ice cubes to the blender.
- Blend on low speed to break up ice, then gradually increase to high speed. Blend for 30-45 seconds until smooth and frothy.
- Taste the mixture and adjust with more lime for acidity or sweetener for sweetness as needed.
- Pour into tall glasses and garnish with a pineapple wedge and mint sprig if desired. Serve immediately.
Notes
For a thicker, slushier texture, use frozen pineapple instead of fresh and reduce the ice. Chill glasses in the freezer for 15 minutes before serving for best results. The drink is best enjoyed immediately but can be stored in the fridge for up to 24 hours; stir well before serving. Avoid over-blending to prevent warming the drink.
