Description

A rich, savory, and comforting slow cooker meal that combines tender flank steak, green peppers, onions, and a creamy provolone and cream cheese sauce over penne or rotini pasta.


Ingredients

  • 1.5 to 2 pounds flank steak or sirloin, sliced thin against the grain
  • 2 medium green bell peppers, diced
  • 1 large yellow onion, sliced thinly
  • 3 cloves garlic, minced
  • 1 cup beef broth (low-sodium)
  • 1 tablespoon Worcestershire sauce
  • 8 ounces provolone cheese, sliced
  • 8 ounces cream cheese, softened
  • 1 pound penne or rotini pasta
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Slice the flank steak against the grain into thin strips. Dice the green peppers and slice the onion. Mince the garlic.
  2. Place the sliced beef, peppers, onions, and garlic into a 6-quart slow cooker.
  3. Pour the beef broth over the meat and vegetables. Add the Worcestershire sauce and Italian seasoning. Stir gently to coat.
  4. Cover and cook on low for 6 to 7 hours until the meat is tender.
  5. While the meat cooks, boil the pasta according to package directions until al dente. Drain and set aside.
  6. After 6 hours, turn the slow cooker to high. Add the softened cream cheese and sliced provolone.
  7. Stir gently until the cheeses are melted and the sauce is smooth and creamy (about 20-30 minutes).
  8. Add the cooked pasta to the slow cooker and stir to coat evenly with the cheese sauce.
  9. Taste and add salt and pepper as needed. Serve immediately.
