Description

A comforting, creamy vegetable casserole that is perfect for potlucks and busy weeknights. This easy side dish uses frozen vegetables, a rich cream cheese sauce, and a crunchy cracker topping for a satisfying meal.

Ingredients

Scale
  • 1 bag (16 oz) frozen mixed vegetables (peas, carrots, corn, green beans)
  • 8 oz full-fat brick cream cheese, softened to room temperature
  • 1/2 cup full-fat sour cream
  • 1/2 cup whole milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup buttery cracker crumbs (e.g., Ritz)
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Thaw frozen vegetables in a colander and drain excess water, but do not squeeze dry.
  3. In a large mixing bowl, beat softened cream cheese and sour cream until smooth.
  4. Gradually whisk in milk, garlic powder, onion powder, dried parsley, salt, and pepper until the mixture is smooth.
  5. Fold the drained vegetables into the sauce mixture until evenly coated.
  6. Pour the vegetable mixture into the prepared baking dish and spread evenly.
  7. In a small bowl, mix shredded cheddar cheese and cracker crumbs. Pour melted butter over the crumbs and stir until it resembles wet sand.
  8. Sprinkle the crumb mixture evenly over the casserole and press down gently.
  9. Bake for 25-30 minutes until the top is golden brown and the edges are bubbling.
  10. Let cool for 5-10 minutes before serving.

Notes

Ensure cream cheese is softened to room temperature to avoid lumps. Do not over-drain vegetables to maintain moisture, but ensure they aren’t too wet to prevent a soupy casserole. For a gluten-free option, use gluten-free crackers or panko. For a low-carb option, use crushed pork rinds or almond flour for the topping.
