- 1 cup cooked, shredded chicken (rotisserie or leftover)

- 1/4 cup thinly sliced red onion
- 2 tablespoons fresh cilantro, chopped
- Optional: Jalapeños, corn, bacon bits, or cheddar cheese
Instructions
- Preheat oven to 425°F (220°C). If using a pizza stone, place it in the oven to preheat.
- While the oven heats, shred the chicken and slice the red onion. Prepare all toppings.
- Place the flatbread on a parchment-lined baking sheet.
- Spread the BBQ sauce evenly over the flatbread, leaving a small border around the edges.
- Sprinkle the shredded chicken evenly over the sauce.
- Top with shredded mozzarella cheese and sliced red onions.
- Bake for 8-10 minutes, or until the cheese is melted and bubbly and the edges are golden brown and crisp.
- Optional: Broil for the last 1-2 minutes for extra crispiness, watching closely to prevent burning.
- Remove from oven and immediately sprinkle with fresh cilantro.
- Let cool for 1-2 minutes before slicing and serving.
Notes
Avoid using too much sauce to prevent a soggy crust. Preheat your baking sheet or stone for maximum crispiness. Shred your own cheese for better melting. If using canned chicken, drain it well. Let the flatbread rest for a minute before slicing to allow cheese to set.
