A quick and easy date night meal featuring jumbo shrimp with a double-coated crispy crust, tossed in a sweet and savory Hawaiian-style garlic pineapple sauce.

- 1 pound jumbo shrimp, peeled and deveined
- ½ cup cornstarch
- ¼ cup all-purpose flour
- 1 large egg, beaten
- 1 cup panko breadcrumbs
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- ½ cup pineapple chunks, drained
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon brown sugar
- 1 teaspoon rice vinegar
- Vegetable oil, for frying
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
- Salt and pepper, to taste
Instructions
- Pat the shrimp thoroughly dry with paper towels to ensure crispiness.
- Set up a breading station with three shallow bowls: one with cornstarch, flour, salt, and pepper; one with beaten egg; and one with panko breadcrumbs.
- Coat the shrimp using a double-dip method: dredge in flour mixture, dip in egg, then press firmly into panko breadcrumbs.
- Heat about half an inch of oil in a large skillet or wok over medium-high heat (350°F-375°F).
- Fry the shrimp in batches for 2-3 minutes per side until golden brown. Do not overcrowd the pan.
- Remove fried shrimp and drain on a wire rack.
- In the same pan, reduce heat to medium and sauté minced garlic and grated ginger for 30 seconds until fragrant.
- Add soy sauce, hoisin sauce, brown sugar, and rice vinegar. Stir until sugar dissolves.
- Toss in pineapple chunks and warm through for 30 seconds.
- Add the fried shrimp back into the pan and toss gently to coat in the sauce.
- Remove from heat immediately to maintain crunch.
- Serve immediately over steamed jasmine rice or noodles, garnished with sesame seeds and green onions.
Notes
Ensure shrimp are completely dry before breading to prevent steaming. Use a double-coating technique for extra crispiness. Toss shrimp in sauce immediately before serving to keep them crunchy. If baking instead of frying, bake at 400°F for 10-12 minutes, flipping halfway.
