Ingredients
- 1.5 lbs Tilapia Fillets
- Cornstarch (for dredging)
- 1 Large Egg
- Neutral Oil (Avocado or Grapeseed)
- 1 tbsp Fresh Ginger, grated
- 2–3 cloves Garlic, minced
- 3 tbsp Honey
- 2 tbsp Soy Sauce (Low-sodium)
- Rice Vinegar
- Scallions, sliced
- Toasted Sesame Seeds
- Red Pepper Flakes (optional)
- Salt and Pepper
Instructions
- Pat tilapia fillets dry with paper towels and season lightly with salt and pepper.
- Set up a dredging station with cornstarch in one shallow dish and beaten egg (with 1 tbsp water) in another.
- Heat neutral oil in a large skillet over medium-high heat until shimmering.
- Dredge each fillet in cornstarch, dip in egg wash, then dredge again in cornstarch, pressing gently to adhere.
- Place fillets in hot oil and cook undisturbed for 2 minutes until golden brown.
- Flip carefully and cook for another 1-2 minutes until opaque and flaky. Remove to a paper towel-lined plate.
- In the same skillet, reduce heat to medium and sauté minced garlic and grated ginger for 30 seconds.
- Add honey, soy sauce, and rice vinegar. Stir constantly until the sauce bubbles and thickens.
- Add scallions and red pepper flakes, simmering for 1 minute.
- Place crispy fish on a serving plate and spoon the warm sauce over the top immediately.
- Garnish with toasted sesame seeds and extra scallions. Serve immediately.

Do not skip drying the fish, as moisture prevents crispiness. Use the double-coating technique (cornstarch-egg-cornstarch) for the best crunch. Serve immediately to maintain texture.
