Crispy Rosemary Dijon Chicken

  • Author: angela_woods

Description

A foolproof recipe for golden, shatteringly crisp chicken thighs coated in a tangy Dijon and fresh rosemary crust, seared in a skillet for maximum flavor and minimal effort.

Ingredients

Scale
  • 2 pounds bone-in, skin-on chicken thighs
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 3 tablespoons Dijon mustard
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth (optional, for pan sauce)

Instructions

  1. Pat chicken thighs dry with paper towels to remove excess moisture. Season both sides generously with salt and pepper. Let sit at room temperature for 15 minutes.
  2. Set up a dredging station with three shallow bowls: one with flour, one with Dijon mustard, and one with the mixture of chopped rosemary, garlic powder, and smoked paprika.
  3. Dredge each chicken thigh in flour, shaking off excess. Dip completely into the Dijon mustard, then press firmly into the herb mixture to coat evenly.
  4. Heat olive oil and butter in a heavy-bottomed skillet (cast iron recommended) over medium-high heat until the butter stops foaming and sizzles.
  5. Place chicken skin-side down in the pan, ensuring not to overcrowd. Cook undisturbed for 6-7 minutes until a deep golden crust forms.
  6. Flip the chicken and cook for another 5-6 minutes on the other side, reducing heat to medium if herbs are browning too quickly. Cook until internal temperature reaches 165°F (74°C).
  7. Remove chicken from the pan and let rest on a plate for 5 minutes before serving to allow juices to redistribute.

Notes

For extra crispiness, let the coated chicken sit in the fridge for 30 minutes before cooking. Do not overcrowd the pan to ensure proper searing rather than steaming. If using chicken breasts, reduce cooking time and monitor temperature closely. Leftovers can be reheated in an oven or air fryer to restore crispiness.
