  • 8 oz (225g) Cremini Mushrooms
  • 5 oz (140g) Fresh Baby Spinach
  • 3 tbsp (45g) Unsalted Butter
  • 45 cloves Fresh Garlic, minced
  • 1 tbsp (15ml) Olive Oil
  • Salt and Black Pepper to taste
  • 1 tsp (5ml) Fresh Lemon Juice
  • Red Pepper Flakes (optional)

Instructions

  1. Wash mushrooms gently and pat dry thoroughly. Trim tough stem ends and quarter large mushrooms or leave small ones whole. Mince garlic finely.
  2. Place a large skillet over medium-high heat and add olive oil. Heat until shimmering but not smoking.
  3. Add mushrooms in a single layer. Let sit for 1 minute to develop a crust, then toss and cook for 3-4 minutes until deeply browned and tender. If sticking, add a tiny splash of water to deglaze.
  4. Reduce heat to medium. Add butter and minced garlic. Stir constantly for 30-60 seconds until fragrant but not browned.
  5. Add fresh spinach to the pan. Toss with mushrooms and garlic, coating in the butter mixture. Cook for 1-2 minutes until spinach is just wilted but still bright green.
  6. Remove from heat. Sprinkle with salt, black pepper, and red pepper flakes if using. Drizzle with lemon juice and toss to combine.
  7. Serve immediately while hot.

Notes

Ensure mushrooms are dry before cooking to achieve a good sear. Do not overcrowd the pan; cook in batches if necessary. Add garlic only after mushrooms are browned to prevent burning. If using frozen spinach, thaw and squeeze out all excess water. For a vegan version, substitute butter with plant-based butter or olive oil.
