Description

A quick and authentic homemade Italian sub sandwich featuring toasted hoagie rolls, a variety of cured meats, provolone cheese, fresh vegetables, and a zesty olive oil and red wine vinegar dressing.


Ingredients

  • Italian Hoagie Rolls (or Ciabatta)
  • Capicola (Prosciutto di Capa)
  • Genoa Salami
  • Spicy Salami
  • Pepperoni
  • Provolone Cheese (Sharp)
  • Ham (Honey Ham, optional)
  • Romaine Lettuce
  • Tomatoes
  • Red Onions
  • Pepperoncini
  • Black Olives (Pitted)
  • Extra Virgin Olive Oil
  • Red Wine Vinegar
  • Dried Oregano
  • Garlic Powder
  • Salt
  • Black Pepper

Instructions

  1. In a small bowl, whisk together 1/4 cup extra virgin olive oil, 2 tablespoons red wine vinegar, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, salt, and black pepper until emulsified. Set aside.
  2. Slice tomatoes into thin rounds and pat dry with a paper towel. Slice red onions into thin rings and soak in cold water for 5 minutes if too pungent, then drain well. Chop pepperoncini and slice black olives.
  3. Slice hoagie rolls in half horizontally, leaving a hinge so they don’t separate completely. Open them up flat.
  4. Preheat toaster oven to 350°F (175°C). Place cut side of rolls on a baking sheet and toast for 3-4 minutes until golden brown. Watch closely to prevent burning.
  5. On the bottom half of the toasted roll, layer the meats (capicola, Genoa salami, spicy salami, pepperoni, and ham if using). Fold the meats rather than laying them flat to create air pockets.
  6. Place provolone cheese slices over the meats. Add ham if using. Ensure the cheese covers the meat layer completely.
  7. Layer the lettuce, tomatoes, onions, olives, and pepperoncini on top of the cheese. Distribute evenly.
  8. Drizzle 2-3 tablespoons of the prepared dressing over the vegetables, ensuring it gets into the crevices. Spread slightly with a spoon if needed.
  9. Place the top half of the roll on the sandwich and press down gently. Slice diagonally and serve immediately while the bread is still warm.

Notes

Toast the bread to create a barrier against wet ingredients and prevent sogginess. Always dry tomatoes and lettuce thoroughly. Slice meats thinly for better texture. The dressing can be adjusted to taste; start with less and add more if needed. Do not freeze the assembled sandwich as vegetables will become mushy.
