Ingredients

Instructions
- Pat chicken thighs dry and cut into 1-inch cubes. Season with salt and pepper, then toss lightly in 1/4 cup cornstarch/arrowroot.
- Heat 1 tbsp neutral oil in a large skillet or wok over medium-high heat. Sear chicken in batches for 3-4 minutes per side until golden and cooked through. Remove chicken and set aside.
- In the same pan, reduce heat to medium. Add garlic and ginger, sautéing for 30 seconds until fragrant.
- Add soy sauce, brown sugar, apple cider vinegar, chicken broth, and sesame oil. Whisk to dissolve sugar and simmer for 2-3 minutes.
- Whisk the cornstarch slurry and pour into the simmering sauce, whisking constantly until the sauce thickens rapidly. Add red pepper flakes if using.
- Return chicken to the pan and toss quickly to coat evenly in the glossy sauce. Remove from heat immediately.
- Assemble bowls by spooning warm rice into containers, topping with sticky chicken, drizzling remaining sauce, and garnishing with green onions and sesame seeds.
