Instructions
- Preheat oven to 350°F (175°C) and place a rack in the center.
- Line a standard 12-cup muffin tin with paper liners or grease lightly.
- Peel and dice ripe mangoes, then blend into a smooth puree. Let cool slightly.
- In a medium bowl, whisk together flour and sugar until no lumps remain.
- In a separate bowl, whisk eggs until lightly beaten, then add melted butter and mango puree. Whisk until smooth.
- Pour wet mixture into dry mixture and gently fold together with a spatula until just combined. Do not overmix.
- Divide batter evenly among muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe mangoes for maximum sweetness. Do not overmix the batter to ensure fluffy texture. If using frozen mango, thaw completely and drain excess liquid. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use coconut oil and flax eggs.
