Description

  • 34 lbs Chuck Roast
  • 4 large Yellow Onions
  • 2 cups Beef Broth (low-sodium)
  • 2 tbsp Soy Sauce
  • 1 tbsp Brown Sugar
  • 3 cloves Garlic (minced)
  • 1 tsp Dried Thyme
  • 1 Bay Leaf
  • 2 tbsp Butter (optional, for searing)
  • Salt and Black Pepper (to taste)

Instructions

  1. Peel and slice the four large yellow onions into thin half-moons.
  2. Pat the chuck roast dry with paper towels and season generously with salt and black pepper.
  3. Heat butter in a cast-iron skillet over medium-high heat and sear the roast on all sides until browned (optional but recommended).
  4. Spread half of the sliced onions on the bottom of a 6-quart slow cooker.
  5. Place the seared (or raw) roast on top of the onion layer.
  6. Top the roast with the remaining onions, spreading them evenly.
  7. Whisk together beef broth, soy sauce, brown sugar, minced garlic, dried thyme, and bay leaf in a small bowl.
  8. Pour the mixture over the onions and beef, ensuring liquid comes halfway up the sides of the roast.
  9. Cover and cook on low for 8 hours (or high for 4-5 hours).
  10. Check for doneness; beef should be fork-tender. Remove the bay leaf.
  11. Optional: To thicken gravy, remove beef and onions, mix 1 tbsp cornstarch with 2 tbsp cold water, stir into liquid, and cook on high for 10-15 minutes.
  12. Slice the beef and serve with onions and gravy.

Notes

Do not lift the lid while cooking to maintain temperature. Slice onions against the grain for easier eating. Ensure internal temperature reaches 195°F for best tenderness. Leftovers improve in flavor after 24 hours.
