- 1 lb baby carrots (or large carrots peeled and cut into uniform sticks)
- 2 tablespoons extra virgin olive oil
- 3–4 cloves fresh garlic, minced
- 1/2 cup freshly grated parmesan cheese
- Sea salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (optional)
- Pinch of red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Wash and trim baby carrots. If using large carrots, peel and cut into uniform sticks. Pat carrots completely dry with a paper towel.
- In a large bowl, combine olive oil and minced garlic. Let sit for a minute to infuse.
- Add carrots to the bowl and toss until evenly coated in the garlic oil.
- Line a baking sheet with parchment paper. Spread carrots in a single layer, ensuring they are not overcrowded.
- Roast for 15 minutes. Remove from oven, stir carrots, and sprinkle half of the parmesan cheese over them.
- Return to oven and roast for another 10-15 minutes, until carrots are tender and edges are browned.
- Remove from oven and immediately sprinkle remaining parmesan cheese over the hot carrots.
- Season with salt and pepper. Add parsley or red pepper flakes if desired.
- Let cool for 1-2 minutes to allow cheese to set, then serve warm.
Notes
Ensure carrots are dry before roasting to prevent steaming. Use freshly grated parmesan for best melting results. If garlic burns, cover loosely with foil for the last few minutes. For dairy-free, substitute parmesan with nutritional yeast.
