  • 1 lb firm white fish (cod, halibut, or sea bass) cut into 1.5-inch cubes
  • 1 lb salmon fillets cut into chunks
  • 1 medium red onion, cut into large squares
  • Green and red bell peppers, cut into chunks
  • 1 cup cherry tomatoes, left whole
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Kosher salt and freshly cracked black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Pat the shrimp, white fish, and salmon dry with paper towels to help the marinade adhere.
  3. In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  4. Add the seafood pieces to the bowl and gently toss to coat evenly. Avoid overmixing to keep fish cubes intact.
  5. Marinate the seafood in the refrigerator for 15 to 20 minutes. Do not exceed this time to prevent the acid from breaking down the proteins.
  6. While seafood marinates, cut red onion and bell peppers into large, uniform chunks.
  7. Thread ingredients onto skewers, alternating between seafood and vegetables (e.g., shrimp, onion, pepper, fish, tomato). Leave space between pieces for heat circulation.
  8. Preheat grill to medium-high heat (approx. 400°F/200°C). Clean grates thoroughly and brush with oil to prevent sticking.
  9. Place skewers on the grill and cook for 2 to 3 minutes per side.
  10. Cook until shrimp are pink and opaque, and fish flakes easily with a fork. Total cooking time is 8 to 10 minutes.
