  • 2 lbs large shrimp (fresh or thawed frozen, deveined and peeled)
  • 1/2 cup soy sauce (low-sodium recommended)
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon fresh ginger (grated)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 stalks green onions (sliced, for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Thaw frozen shrimp in cold water if necessary, then pat them completely dry with paper towels. Devein and peel if not already done.
  2. In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, and red pepper flakes until the honey is dissolved.
  3. Add the shrimp to the marinade, tossing to coat evenly. Marinate in the refrigerator for 15-20 minutes (do not exceed 30 minutes).
  4. Preheat grill or stovetop grill pan to medium-high heat. Oil the grates lightly to prevent sticking.
  5. Optional: Thread shrimp onto soaked wooden skewers (2-3 per skewer).
  6. Grill shrimp for 2-3 minutes per side until pink and opaque. Do not overcook.
  7. During the last minute, brush with additional marinade for extra gloss.
  8. Remove from grill, garnish with green onions and sesame seeds, and serve immediately.

Notes

Pat shrimp dry thoroughly before marinating to ensure a good sear. Do not marinate longer than 30 minutes as the acid can break down the shrimp. Shrimp are done when they curl into a loose ‘C’ shape; tight ‘O’ shape indicates overcooking. For a gluten-free version, substitute soy sauce with tamari or coconut aminos.
