A quick, comforting diner-style grilled cheese sandwich featuring a blend of sharp cheddar and Swiss cheese, sautéed onions, and mustard on toasted sourdough bread.

- 2 thick slices sourdough bread
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup Swiss cheese, sliced
- 2 tablespoons unsalted butter, softened
- 1 small yellow onion, thinly sliced
- 1 tablespoon whole grain mustard
- 1/2 teaspoon garlic powder
- Freshly cracked black pepper, to taste
Instructions
- Heat a small pan over medium heat with a teaspoon of butter. Sauté the sliced onions for about 5 minutes until soft and translucent. Set aside.
- Shred the cheddar and Swiss cheese while the onions cook.
- Spread softened butter on one side of each slice of sourdough bread.
- Lay one slice butter-side down. Spread mustard on the unbuttered side, then sprinkle with garlic powder and pepper.
- Layer half the cheddar, half the Swiss, the cooked onions, and the remaining cheese on the bread.
- Top with the second slice of bread, butter-side up, and press down gently.
- Heat a skillet over medium-low heat. Place the sandwich in the pan and cook for 3 minutes until golden brown.
- Flip the sandwich carefully. Cook for another 3 minutes. If needed, cover with a lid for the last minute to help the cheese melt.
- Remove from pan and let rest for 1 minute before cutting in half and serving.
Notes
Use room temperature butter for even spreading. Cook on medium-low heat to prevent burning the bread before the cheese melts. For a gluten-free option, use gluten-free sourdough bread. Do not reheat in the microwave as it makes the bread chewy; reheat in a skillet instead.
