Description
A reliable, forgiving Southern-style blackberry cobbler featuring a juicy berry filling and a tender, biscuit-style topping. This rustic dessert is easy to make with simple pantry ingredients and perfect for any occasion.
Ingredients
Scale
- 4 cups blackberries (fresh or frozen, do not thaw if frozen)
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/3 cup whole milk
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat oven to 375°F (190°C) and place a rack in the center.
- In a medium mixing bowl, combine blackberries, sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to coat. Let sit for 10 minutes.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Pour melted butter and milk into the dry ingredients. Stir gently with a wooden spoon until just combined; do not overmix.
- Pour the berry mixture into a 9×9 inch baking dish. Drop spoonfuls of the batter over the top, leaving gaps for the fruit to bubble up.
- Bake for 45-50 minutes until the topping is golden brown and the filling is bubbling vigorously.
- Remove from oven and let cool for at least 15 minutes to allow the sauce to set.
- Serve warm with vanilla ice cream or whipped cream.
Notes
If using frozen berries, do not thaw them first to prevent a watery mess. Let the cobbler cool for 15 minutes before serving to ensure the filling sets properly. If the topping browns too quickly, tent with aluminum foil.
