Description
A quick and easy 15-minute weeknight dinner featuring seared chicken breasts in a sweet and tangy balsamic glaze with burst cherry tomatoes.

- 4 boneless, skinless chicken breasts
- 1 pint cherry or grape tomatoes
- 1/4 cup balsamic vinegar
- 1 tablespoon honey or maple syrup
- 2 tablespoons extra virgin olive oil
- 3–4 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and freshly cracked black pepper
- Fresh basil leaves, torn
Instructions
- Pat chicken breasts dry and season generously with salt and pepper. Let sit at room temperature for 10 minutes if possible.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden brown and cooked through. Remove to a plate.
- Reduce heat to medium. Add tomatoes to the same pan and cook for 3-4 minutes until they start to soften and blister.
- Add minced garlic and dried oregano, stirring constantly for 30 seconds until fragrant.
- Pour in balsamic vinegar and honey, scraping up browned bits from the bottom of the pan. Simmer for 2-3 minutes until the sauce reduces and becomes glossy.
- Return chicken to the pan, nestling it into the tomatoes. Spoon sauce over the chicken and simmer for 1-2 minutes.
- Remove from heat, tear fresh basil over the top, and serve immediately.
Notes
Do not overcrowd the pan when searing chicken to ensure a good crust. Ensure balsamic vinegar is of good quality for best flavor. This recipe is naturally gluten-free if using certified gluten-free vinegar. Leftovers can be stored in the fridge for up to three days.
