Ingredients

  • 1 cup plain full-fat Greek yogurt
  • 1/4 cup freshly squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • Boneless, skinless chicken breasts or thighs

Instructions

  1. Whisk the Greek yogurt, lemon juice, and olive oil in a medium bowl until smooth and creamy to create an emulsion.
  2. Add the minced garlic, dried oregano, dried thyme, salt, black pepper, and red pepper flakes (if using) to the bowl. Whisk to combine thoroughly.
  3. Pat the chicken pieces dry with paper towels to remove excess moisture.
  4. Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring every surface is coated. Massage the marinade into the meat if using a bag.
  5. Refrigerate for 30 minutes to 2 hours for breasts, or up to 4 hours for thighs. Do not exceed 24 hours.
  6. Remove chicken from the fridge 15 minutes before cooking to bring to room temperature.
  7. Cook chicken on a grill, in an oven, or in a pan until the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes before serving to allow juices to redistribute.

Notes

Do not skip the resting period after cooking to ensure juiciness. If the marinade is very wet, pat the chicken dry before cooking to ensure browning. Yogurt can burn on high heat, so monitor grilling closely. For dairy-free, substitute with coconut yogurt or blended silken tofu.
