Description

A quick, healthy, and satisfying 20-minute meal featuring seared shrimp, creamy avocado, and fresh vegetables over jasmine rice with a zesty lime-cilantro dressing.


Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 2 large ripe avocados
  • 1 cup jasmine rice (or brown rice/quinoa)
  • 1 large handful cilantro leaves
  • 1 English cucumber, diced
  • 2 fresh limes (juice and zest)
  • 2 cloves garlic, minced
  • 1/4 cup red onion, thinly sliced
  • 1/2 teaspoon red chili flakes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon soy sauce
  • Kosher salt and freshly cracked black pepper to taste

Instructions

  1. Rinse 1 cup of jasmine rice under cold water until clear. Combine with 1.5 cups of water in a saucepan, bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
  2. Pat the shrimp dry with paper towels. Season generously with salt, pepper, and minced garlic.
  3. In a small bowl, whisk together the juice and zest of 2 limes, 2 tablespoons olive oil, 1 teaspoon soy sauce, and 1/2 teaspoon chili flakes until emulsified.
  4. Dice the cucumber, slice the red onion, slice the avocado into wedges, and chop the cilantro. Place vegetables in a large mixing bowl.
  5. Heat a large skillet or wok over medium-high heat with a splash of oil. Sear shrimp in a single layer for 2-3 minutes per side until pink and opaque. Remove immediately.
  6. Divide cooked rice among four bowls. Top with the vegetable mixture, avocado slices, and seared shrimp. Drizzle with dressing and garnish with extra cilantro and lime juice.

Notes

Pat shrimp dry before cooking to ensure a good sear. Slice avocado just before serving to prevent browning. For meal prep, store dressing and shrimp separately to maintain texture. If using frozen shrimp, thaw completely in cold water and dry thoroughly.
