Ingredients

  • 1 cup (200g) granulated sugar
  • ¾ cup (75g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk
  • ½ cup (120ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh strawberries, hulled and chopped
  • 4 slices thick-cut bacon, cooked crispy and crumbled
  • 1 tablespoon granulated sugar (for strawberries)
  • ½ cup (120ml) heavy cream (for glaze)
  • ½ cup (85g) dark chocolate chips (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
  2. Chop strawberries into small cubes and toss with 1 tablespoon sugar. Cook bacon in a skillet until crispy, then drain and crumble.
  3. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk eggs, sugar, buttermilk, vegetable oil, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients and gently fold until just combined. Do not overmix.
  6. Gently fold in the sugared strawberries and crumbled bacon.
  7. Pour batter into prepared pan and bake for 30-35 minutes (or 35-40 for a 9×13 dish) until a toothpick comes out with moist crumbs.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For glaze, heat heavy cream until simmering, pour over chocolate chips, let sit for a minute, then stir until smooth. Drizzle over cooled cake and sprinkle with salt.

Notes

Ensure ingredients are at room temperature for best emulsification. Do not overmix the batter to avoid a tough texture. If strawberries are very juicy, toss them with a teaspoon of flour before adding to absorb excess moisture. The cake is best served at room temperature.
