A hearty, smoky, and savory one-pot stir fry featuring seared flank steak, crisp bell peppers, and onions in a homemade sweet and salty glaze. Perfect for busy weeknights with minimal cleanup.

- 1.5 lbs flank steak or sirloin, sliced thinly against the grain
- 2 tablespoons coconut oil or avocado oil
- 1 large red bell pepper, sliced into strips
- 1 large green bell pepper, sliced into strips
- 1 medium yellow onion, sliced into half-moons
- 4 cloves garlic, minced
- 1 tablespoon ginger, freshly grated
- 1/3 cup soy sauce (low-sodium recommended)
- 2 tablespoons coconut aminos
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 1/4 cup water
- 1 teaspoon sesame oil
- 2 cups cooked steamed jasmine rice
- Green onions, chopped (for garnish)
- Sesame seeds, toasted (for garnish)
Instructions
- Slice the flank steak thinly against the grain. Toss slices with half of the cornstarch from the sauce mixture and let sit for 10 minutes.
- In a small bowl, whisk together soy sauce, coconut aminos, brown sugar, rice vinegar, remaining cornstarch, and water until dissolved. Set aside.
- Heat a large skillet (preferably cast-iron) over medium-high heat. Add coconut oil and let it get hot.
- Sear the beef in a single layer (in batches if necessary) for 2-3 minutes per side until browned but not fully cooked. Remove beef to a plate.
- In the same skillet, add a little more oil if needed. Sauté onions and bell peppers for 3-4 minutes until softened and slightly charred.
- Add garlic and ginger to the vegetables and sauté for the last 30 seconds.
- Return the beef and any accumulated juices to the pan. Pour the sauce mixture over everything.
- Stir constantly for 1-2 minutes until the sauce thickens and coats the meat and vegetables in a glossy glaze.
- Remove from heat, drizzle with sesame oil, and toss gently.
- Serve immediately over steamed jasmine rice, garnished with green onions and sesame seeds.
Notes
Always slice beef against the grain to ensure tenderness. Do not overcrowd the pan when searing the meat to ensure a good Maillard reaction. Prep all ingredients before cooking as the stir-fry moves quickly. For a spicy kick, add red pepper flakes or jalapeño.
