Description

A quick and healthy weeknight meal featuring golden, flaky white fish and crispy baby potatoes cooked in a single skillet with lemon-herb butter.


Ingredients

  • 1 lb white fish fillets (cod, halibut, or tilapia)
  • 1 lb baby potatoes (Yukon Gold or red)
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (half juiced, half sliced)
  • Fresh parsley, chopped
  • Fresh thyme leaves
  • Kosher salt
  • Freshly cracked black pepper
  • Red pepper flakes (optional)

Instructions

  1. Wash potatoes; leave small ones whole or cut larger ones in half. Toss with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  2. Heat a large heavy-bottomed skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter, waiting until butter foams.
  3. Add potatoes to the pan in a single layer. Cook undisturbed for 4-5 minutes until golden, then flip and cook for another 5 minutes. If needed, add a splash of water and cover for 2 minutes to steam.
  4. Pat fish fillets completely dry and season both sides generously with salt and pepper.
  5. Remove cooked potatoes from the pan and set aside on a plate, leaving fond in the pan.
  6. Add remaining 1 tablespoon butter to the hot pan. Once melted, place fish fillets skin-side down. Do not touch for 3-4 minutes to form a crust.
  7. Flip fish and add minced garlic to the pan. Cook for 2-3 minutes, basting fish with the butter-garlic mixture.
  8. Check for doneness (internal temp 145°F or flakes easily). Remove fish and place on top of potatoes.
  9. Squeeze fresh lemon juice over the dish and garnish with parsley and thyme. Serve immediately.

Notes

Ensure fish is patted completely dry before cooking to ensure a good sear. Let fish come to room temperature for 10 minutes before cooking. Do not overcrowd the pan to avoid steaming. If using frozen fish, thaw in the fridge overnight and pat dry. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven at 350°F.
