- 2 to 3 pounds boneless, skinless chicken breasts
- 1.5 to 2 pounds red potatoes (cut into 1-inch cubes)
- 1 packet (1 ounce) ranch seasoning mix
- 2 cups shredded cheddar cheese
- 1/2 cup low-sodium chicken broth
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Salt to taste (optional)
Instructions
- Wash and cut red potatoes into 1-inch cubes. Place them at the bottom of the slow cooker.
- If chicken breasts are large, cut them in half horizontally. Season lightly with salt and pepper.
- Place seasoned chicken breasts on top of the potatoes.
- Sprinkle the ranch seasoning evenly over the chicken.
- Pour chicken broth over the ingredients.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken reaches 165°F and potatoes are tender.
- Turn slow cooker to HIGH. Sprinkle shredded cheddar cheese over the top.
- Replace lid and let sit for 5-10 minutes until cheese is melted.
- Remove chicken and shred using two forks.
- Return shredded chicken to the pot and gently stir to combine with potatoes and cheese sauce.
- Serve immediately.
Notes
For best results, grate your own cheddar cheese to avoid anti-caking agents that cause graininess. Use red potatoes or Yukon Golds as they hold their shape better than Russets. Do not freeze leftovers as the texture of the cheese and potatoes will change. Reheat gently with a splash of broth or milk.
