  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 tablespoon butter (optional)

Instructions

  1. Wash potatoes and cut into 1.5-inch chunks. Chop the yellow onion into similar-sized pieces. Place these vegetables at the bottom of the slow cooker insert.
  2. Pat the pork loin dry with paper towels. Season all sides generously with salt and black pepper. Rub dried thyme and rosemary onto the meat.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the pork loin for 2-3 minutes on each side until a brown crust forms. (Optional but recommended).
  4. Place the seared pork loin on top of the potatoes and onions in the slow cooker. Pour the chicken broth around the pork, avoiding pouring directly over the seared crust.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the internal temperature reaches 145°F and the meat is fork-tender.
  6. Remove the pork loin to a cutting board and let it rest for 5-10 minutes. Slice the pork and serve over the potatoes. Stir in butter if desired.

Do not cook frozen pork loin in the slow cooker; thaw it completely first. Always use a meat thermometer to ensure the pork reaches 145°F to prevent drying out. Letting the meat rest after cooking is crucial for juiciness. If using HIGH setting, check frequently to avoid overcooking.
