  • Author: angela_woods
  • Total Time: 60 minutes
  • Yield: 8 servings 1x

Description

A comforting, simple Southern dessert featuring fresh blueberries and a golden, cake-like crust. This recipe is easy to make, uses wholesome ingredients, and delivers a rich, nostalgic flavor perfect for any occasion.

Ingredients

Scale
  • 4 cups fresh or frozen blueberries
  • 1 cup granulated white sugar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 3/4 cup whole milk
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the blueberries, sugar, lemon juice, and cornstarch. Toss gently until the berries are evenly coated.
  3. Pour the blueberry mixture into a 9×9 inch baking dish.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. In another small bowl, mix the milk and melted butter.
  6. Combine the wet and dry ingredients gently to make the batter. Do not overmix; lumps are okay.
  7. Pour the batter evenly over the blueberry mixture. Do not stir.
  8. Bake for 45-50 minutes, or until the top is golden brown and the filling is bubbly.
  9. Remove from the oven and let it cool for 10 minutes before serving.

Notes

If using frozen blueberries, do not thaw them first to prevent a mushy texture. If the top browns too quickly, cover loosely with foil. Let the cobbler cool for 10 minutes to allow the filling to thicken. For a gluten-free version, use a 1:1 gluten-free flour blend. For a dairy-free version, substitute milk with almond or oat milk and use vegan butter.
