Description
A savory and comforting soy sauce mushroom rice dish designed for meal prep. It features deeply browned mushrooms, fluffy rice, and a rich umami sauce that improves in flavor over several days.

- 2 cups long-grain white rice (Jasmine or Basmati)
- 1 ounce dried shiitake mushrooms
- 8 ounces fresh cremini or button mushrooms, sliced
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon toasted sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 stalks green onions, sliced
- 1 tablespoon vegetable oil
- 1 teaspoon sugar
- 1/4 teaspoon white pepper
- 2 1/2 cups water or mushroom soaking liquid
Instructions
- Rinse 2 cups of rice under cold water until clear. Combine with 2 1/2 cups water (or mushroom soaking liquid) in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 18 minutes. Remove from heat and let sit covered for 10 minutes, then fluff with a fork.
- If using dried shiitakes, soak them in warm water for 20 minutes. Squeeze out excess water, slice them, and reserve the soaking liquid for the rice.
- Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add sliced fresh and rehydrated mushrooms. Cook without stirring for 2-3 minutes to brown, then stir and cook for another 5 minutes until deeply golden and moisture has released.
- Reduce heat to medium. Add minced garlic and grated ginger. Stir constantly for 1 minute until fragrant.
- Pour in soy sauce, sesame oil, sugar, and white pepper. Stir to combine and let bubble/thicken for 2 minutes.
- Add the cooked rice to the skillet. Gently fold everything together until rice is evenly coated. Taste and adjust seasoning.
- Remove from heat. Stir in half of the sliced green onions. Let cool slightly before portioning into containers.
Notes
Brown mushrooms in batches to avoid steaming. Use mushroom soaking liquid for cooking rice for extra flavor. Let rice cool completely before sealing containers to prevent sogginess. Store in fridge for up to 4 days or freeze for up to 3 months.
