Description

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized strips
  • Large flour tortillas (burrito-sized)
  • Shredded Mexican blend cheese (cheddar, Monterey Jack, queso quesadilla)
  • Hot honey
  • Garlic powder
  • Smoked paprika
  • Extra virgin olive oil
  • Salt and black pepper
  • Fresh cilantro (optional, for garnish)
  • Lime wedges (for serving)

Instructions

  1. Pat chicken pieces dry with paper towels and place in a bowl.
  2. Season chicken with garlic powder, smoked paprika, salt, and black pepper; toss to coat evenly.
  3. Heat a tablespoon of olive oil in a medium skillet over medium-high heat.
  4. Cook chicken in a single layer for 3-4 minutes per side until browned and cooked through; remove and set aside.
  5. Lay a tortilla flat and sprinkle shredded cheese over half of it.
  6. Add a layer of cooked chicken on top of the cheese.
  7. Fold the empty half of the tortilla over the filling and press down gently.
  8. Heat a clean skillet over medium heat with a little oil or butter.
  9. Cook the quesadilla for 2-3 minutes until the bottom is golden brown and crispy.
  10. Flip carefully and cook the other side for another 2-3 minutes until cheese is melted.
  11. Remove from pan, let rest for one minute, then drizzle with hot honey and sprinkle with cilantro.
  12. Cut into triangles and serve immediately with lime wedges.

Notes

For best results, shred your own cheese to avoid anti-caking agents that prevent melting. Use medium heat to prevent burning the tortilla before the cheese melts. Let the quesadilla rest for one minute before cutting to allow the cheese to set. You can use rotisserie chicken to save time.
