Recreate the famous Texas Roadhouse salmon at home with this quick, sweet, and savory glaze. This recipe takes under 20 minutes to prepare and delivers a caramelized, sticky crust on moist, flaky salmon fillets.

- 4–6 oz salmon fillets (fresh or thawed)
- 1 tablespoon vegetable oil (for searing)
- 1/2 cup packed brown sugar
- 1/4 cup low-sodium soy sauce
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1/2 teaspoon freshly ground black pepper
- Salt (to taste)
Instructions
- Pat salmon fillets dry with paper towels and season lightly with salt and pepper.
- In a small saucepan over medium heat, melt butter with vegetable oil. Add minced garlic and stir for 30 seconds until fragrant.
- Whisk in soy sauce and lemon juice. Simmer for 1 minute.
- Slowly sprinkle in brown sugar while whisking continuously. Simmer for 2-3 minutes until the glaze thickens and coats the back of a spoon. Remove from heat.
- Heat a skillet over medium-high heat with a little oil. Place salmon fillets skin-side down (or presentation-side down) and sear for 3-4 minutes without moving to form a crust.
- Flip salmon fillets. Spoon a generous amount of warm glaze over the top. Cook for another 3-4 minutes, allowing the glaze to bubble and stick.
- Flip again if needed and add more glaze. Cook until internal temperature reaches 145°F and fish flakes easily with a fork.
- Remove from heat, let rest for 1 minute, and spoon remaining glaze over the top. Serve immediately.
Notes
Ensure ingredients are at room temperature for even melting. Pat salmon dry thoroughly for a better sear. Do not crowd the pan to avoid steaming the fish. Use fresh garlic for best flavor. For gluten-free, substitute soy sauce with tamari or coconut aminos.
