Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/3 cup smooth peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh lime juice
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon Sriracha (or chili flakes)
  • 23 tablespoons warm water
  • Large flour tortillas (burrito-sized)
  • Shredded purple or green cabbage
  • Julienne or grated carrots
  • Thinly sliced cucumber
  • Fresh cilantro leaves
  • Crushed peanuts (optional, for garnish)
  • Salt and pepper
  • 1 teaspoon oil (for cooking chicken)

Instructions

  1. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, garlic, ginger, honey, Sriracha, and warm water until smooth and creamy. Adjust consistency with more water if needed.
  2. Pat chicken breasts dry and slice into thin strips or cubes. Season with salt and pepper.
  3. Heat oil in a non-stick skillet over medium-high heat. Sear chicken for 2-3 minutes without moving, then flip and cook for 3-4 minutes until cooked through. Remove and let rest.
  4. Shred cabbage and julienne carrots. Slice cucumber and wash cilantro.
  5. Warm tortillas in a dry skillet or microwave until pliable.
  6. Assemble wraps by spreading sauce on the tortilla, adding cabbage, carrots, chicken, cilantro, and cucumber. Drizzle with extra sauce if desired.
  7. Fold sides in and roll tightly from the bottom up. Slice diagonally and serve immediately.

Notes

Pat chicken dry before cooking for a better sear. Warm tortillas to prevent tearing. Store chicken and sauce separately from vegetables for meal prep to avoid sogginess. The sauce can be made up to a week in advance.
