- 2 boneless, skinless chicken breasts
- 1/3 cup smooth peanut butter
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 tablespoon fresh lime juice
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 tablespoon honey (or maple syrup)
- 1 teaspoon Sriracha (or chili flakes)
- 2–3 tablespoons warm water
- Large flour tortillas (burrito-sized)
- Shredded purple or green cabbage
- Julienne or grated carrots
- Thinly sliced cucumber
- Fresh cilantro leaves
- Crushed peanuts (optional, for garnish)
- Salt and pepper
- 1 teaspoon oil (for cooking chicken)
Instructions
- In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, garlic, ginger, honey, Sriracha, and warm water until smooth and creamy. Adjust consistency with more water if needed.
- Pat chicken breasts dry and slice into thin strips or cubes. Season with salt and pepper.
- Heat oil in a non-stick skillet over medium-high heat. Sear chicken for 2-3 minutes without moving, then flip and cook for 3-4 minutes until cooked through. Remove and let rest.
- Shred cabbage and julienne carrots. Slice cucumber and wash cilantro.
- Warm tortillas in a dry skillet or microwave until pliable.
- Assemble wraps by spreading sauce on the tortilla, adding cabbage, carrots, chicken, cilantro, and cucumber. Drizzle with extra sauce if desired.
- Fold sides in and roll tightly from the bottom up. Slice diagonally and serve immediately.
Notes
Pat chicken dry before cooking for a better sear. Warm tortillas to prevent tearing. Store chicken and sauce separately from vegetables for meal prep to avoid sogginess. The sauce can be made up to a week in advance.
