Ingredients

  • 2 medium ripe mangoes
  • 2 medium ripe avocados
  • 3 tablespoons fresh lime juice
  • 1/2 cup fresh cilantro, chopped
  • 1 small jalapeño pepper, minced
  • 1/4 cup red onion, finely diced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash mangoes and slice off the cheeks from either side of the pit. Score the flesh in a crosshatch pattern, turn skin inside out to pop out cubes, and slice cubes off the skin into a bowl. Dice remaining flesh around the pit to yield about 2 cups.
  2. Cut avocados in half, remove pits, and scoop out flesh. Dice into cubes similar in size to the mango. Toss lightly with 1 tablespoon of lime juice to prevent browning.
  3. Finely dice the red onion. If desired, soak in ice water for 10 minutes to reduce pungency, then drain and pat dry. Mince the jalapeño, removing seeds and membranes if less heat is preferred. Chop the cilantro.
  4. In a medium mixing bowl, combine mango cubes, avocado cubes, red onion, jalapeño, and cilantro. Gently toss to combine without mashing the avocado.
  5. Drizzle remaining lime juice over the mixture. Add sea salt and black pepper. Fold gently with a silicone spatula to distribute flavors evenly.
  6. Taste and adjust seasoning if needed. Let sit for 5-10 minutes before serving to allow flavors to meld.

Notes

Ensure mangoes are ripe but not mushy for best texture. Use fresh lime juice to prevent avocado browning and add brightness. For less heat, remove seeds and membranes from the jalapeño. Store leftovers in an airtight container with plastic wrap pressed directly onto the surface to prevent oxidation.
