Homemade Dinner Rolls: Best Soft Side to Pair

  • Author: angela_woods
  • Total Time: 2 hours 30 minutes
  • Yield: 12 servings 1x

Description

Soft, pillowy homemade dinner rolls made with simple ingredients. These versatile rolls feature a crisp golden crust and a tender, airy interior, perfect for pairing with stews, soups, or roasted meats.

Ingredients

Scale
  • 4 cups (500g) All-Purpose Flour
  • 1 packet (2 ¼ tsp or 7g) Active Dry Yeast
  • 1 cup (240ml) Whole Milk
  • ¼ cup (57g) Unsalted Butter, melted
  • 2 tablespoons Granulated Sugar
  • 1 large Egg, room temperature
  • 1 ½ teaspoons Salt
  • Extra Butter for brushing

Instructions

  1. Activate the Yeast: Heat milk to 110°F (43°C). Remove from heat and stir in sugar and yeast. Let sit for 5-10 minutes until foamy.
  2. Mix the Dough: In a large bowl, combine flour and salt. Add yeast mixture, egg, and melted butter. Stir until a shaggy dough forms.
  3. Knead the Dough: Knead by hand for 5-7 minutes or by mixer on medium-low for 5 minutes until smooth and elastic.
  4. First Rise: Place dough in an oiled bowl, cover, and let rise in a warm place for 1-1.5 hours until doubled in size.
  5. Shape the Rolls: Punch down dough. Divide into 12 equal pieces. Roll into balls and place seam-side down in a greased 9×13 inch baking dish, touching.
  6. Second Rise: Cover and let rise for 30-45 minutes until puffy. Preheat oven to 375°F (190°C) during the last 15 minutes.
  7. Bake: Brush tops with beaten egg. Bake for 20-25 minutes until golden brown and internal temperature reaches 190°F (88°C).
  8. Finish: Immediately brush hot rolls with melted butter. Cool in pan for 5 minutes before serving.

Notes

For the softest texture, scald the milk to break down proteins. Ensure yeast is fresh and milk temperature is around 110°F. If dough is too sticky, add flour sparingly; if too dry, add milk. Rolls can be frozen for up to 3 months.
